Our Southwest inspired Spicy Corn Relish will add a nice kick to your favorite Mexican and TexMex cuisine. Spice up a plate of nachos, load onto fish tacos or use as an accompaniment with your highly acclaimed chili. You may even want to turn it up a notch for your next playoff party.

Corn, Pure Cane Sugar, Onions, Cider Vinegar, Red Bell Peppers, Chilis, Jalapenos, Salt, Guar and Xanthan Gum, Mustard Seed, Black Pepper, Cayenne Pepper, Celery Seed, Turmeric

Southwest Sweet Potato Salad

Ingredients

Potato Mixture:
    • 3 pounds sweet potatoes, washed and cubed with skin on
    • Olive oil, enough to coat potatoes, peppers, and onions
    • 1 red pepper, seeded and diced
    • 1 yellow pepper, seeded and diced
    • 1 large red onion, diced

Dressing:
  • 1/2 cup Stonewall Kitchen Spicy Corn Relish
  • 1/2 bottle Stonewall Kitchen Cilantro Lime Dressing
  • 2 Tablespoons fresh cilantro, chopped
  • 2 Tablespoons fresh lime juice
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

 

  1. Preheat oven to 450 degrees F.
  2. Wash and cube sweet potatoes. Place in a roasting pan and toss with olive oil.
  3. Roast in oven until browned, approximately 20 minutes, allow to cool.
  4. Dice the peppers and onion. Place in roasting pan and toss with olive oil.
  5. Roast in oven until browned, approximately 15 minutes, allow to cool.
  6. Toss sweet potatoes, peppers and onions with remaining ingredients in a large bowl.
  7. Add dressing and chill for at least 1 hour.
